Cowboy Casserole

What You’ll Need

  • 1 lb Italian pork sausage
  • 1 small onion
  • potatoes thinly sliced (eyeball amount based on your liking)
  • 1 green bell pepper
  • Frozen corn
  • 1-14.5oz can kidney beans
  • 1-14.5oz can diced tomatoes
  • 2 tsp minced garlic
  • 1 tsp tabasco sauce (or more if you like spice)
  • 1/2 cup beef broth (I like to use better than bullion paste)
  • 1/2 tsp chili powder
  • 1 cup shredded colby chack cheese from @the.cheesery 😉
  • Salt & Pepper
  • Other toppings: cilantro, sour cream


  1. Brown the sausage and onion in a skillet
  2. Add the sausage & onion mixture to the crockpot and top with sliced potatoes
  3. Add the bell pepper, corn, kidney beans, tomatoes, garlic, tabasco sauce, beef broth, chili powder, and salt & pepper to taste
  4. Stir everything together and cook on high for 3-5 hours or low 5-7 hours, or until potatoes are tender
  5. Add grated cheese to the top and allow it to melt. Serve with sour cream and cilantro if desired.
